I'm looking from a collector perspective.

The extract, or lack of it, is a "deal breaker" for me. The extract proves that the configuration is correct and executed by Patek. Having it, or ability to get it, is a green light to move forward with the transaction.
...
Now, lets talk value.
The "gold standard" is an all-original example, as it left the factory, well preserved and full set.
Lets assume that the market value for the above is 80K.
I wouldn't pay that for a watch with an altered, not the same, dial.
So lets say I'd pay 65K , but that's me.
...
bear in mind that if you want to trade this down the road, you may find buyers sharing the same opinion as mine.
Same as that dial variant add value to a watch (double red, double name, special color etc), a dial change should be priced in.
...
One benefit of the newer dial though, you can happily wear it with lesser stress as the potential "damage" to the dial is already calculated in the price
.
....
Bottom line:
Kosher watch
Should be priced accordingly.
